Ingredients for the Snow Skin Mooncake Recipes
There are two sets of ingredients required to prepare a Snow Skin.
The first set required is for making the mooncake and the second set is needed to make the fillings.

1. 100-450 g Fried Glutinous Rice Flour
2. 350 g Icing Sugar
3. 250 ml Cold Water
4. 40 g Vegetable Shortening
5. Colouring or Flavoring (As per requirements)
Tips:
a) For a thorough cooking of Snow Skin, do not use ordinary rice flour.
b) Sprinkle some flour when rolling out the dough.
c) The quantity mentioned is for a larger batch of cakes and can vary accordingly.
Ingredients for fillings
The fillings for snow skin mooncake can be chosen as per your liking.
There are several common food items that have been used as stuffing in modern mooncakes such as Mango Pomelo Sago, Strawberry, Fruit, Durian, Sesame, Chocolate, Green Tea, Cheese, Red Bean Paste and Coffee.
Steps to make Snow Skin Mooncake
Given below is a simple hands-on guide on how to prepare delicious snow skin mooncake without creating a ruckus in your kitchen.
The instructions are given in point format in our baking classes so that the readers can follow them step-wise. So let the baking begin.
- The first step is to mix the icing sugar along with fried glutinous rice flour and vegetable shortening. Continue stirring till they start to appear like soft breadcrumbs.
- The next step is to add 3-4 drops of colouring into the cold water.
- Add the coloured cold water and continue kneading till the dough absorbs the water and achieves a smooth and flexible consistency.
- Let the dough rest for 10-15 minutes.
- The next step is to roll the fillings of your choice into round balls so that you can wrap the snow skin completely around them.
*Tip: The trickiest part here is to figure the ratio between skin and filling. If the skin is too thick, it will not taste sweet. The ratio should be 1 part dough: 2 part filling.
- Press the dough with filling into the mooncake mould gently. Do not push it or it will destroy the shape. Piston it out.
- Keep the perfectly shaped mooncake in the freezer.
- Have it chilled.
