Our cooking instructor will guide students in the cooking process step by step, clearly explaining the ingredients, techniques, and approaches needed to come up with the best version of these dishes.

Hainanese chicken rice is our all-time favourite. You are in luck as our chefs are experts in preparing this cuisine.

  • Rice:  We cook the rice with garlic, ginger, and chicken broth to ensure that each grain is not sticky.
  • Poached Chicken: We poach the chicken in a broth that normally has scallions and ginger.
  • Sauce: Normally, there are two sauces; chilli sauce and fragrant sesame oil.
  • Oyster Sauce Veggies: Stir-fried or blanched veggies like bok choy and other green leafy greens seasoned with oyster sauce.
  • Roasted Pork Belly: This is another popular Chinese dish and you will love its succulent skin and crispy skin.

Class 2: Chinese Braised Duck with Yam Rice

In this 3-hour hands-on session, you will learn how to use the different ingredients to prepare this Chinese cuisine.

  • Clean the Duck: You will learn the techniques of cleaning and preparing the duck. This includes getting rid of excess fat, cleaning the cavity, and getting the duck ready for braising.
  • Make the Braising Liquid: In this lesson, you will learn how to make a braising liquid that is a combination of spices, seasoning as well and sauces.
  • Cook the Duck: Here, you will learn the secret of braising the duck.
  • Make the Yam Rice: You will learn how to combine yam, rice, and the braising sauce to make this mouthwatering side dish.
  • Make the Sambal: This is a spicy paste that adds a burst of flavour and heat to the dish. You will learn how to make sambal from scratch.
  • Make Braised Eggs and Tofu: This lesson will cover the step-by-step process of preparing braised eggs and tofu.
  • Cut and Portion the Duck: Our instructor will guide you on how to cut and portion the braised duck properly for serving, making sure that each slice is flavorful and tender.
  • Make Mango Sago Coconut Dessert: In this hands-on class, you will learn the right way of making mango sago coconut.

Class 3: Hong Kong Comfort Food

Next, in this 3-hour hands-on Chinese cuisine class, you will learn the techniques to make wonton soup, char siew, and dumpling skin.

The purpose of this session is to equip participants with the knowledge and abilities needed to recreate a typical Hong Kong comfort dish. Students can enjoy cooking these well-known dishes at home and capture the authentic flavour of Hong Kong cuisine by manufacturing the essential components from scratch.

Participants will learn how to make these remarkable meals.

  • Cantonese-style wonton noodles with authentic broth/soup made from scratch. We prepare the broth from pork bones and prawn shells.
  • Char Siew is made from scratch.
  • Wonton Dumplings with the skin made from scratch.
  • Asian Greens (either baby kailan or chye sim) with oyster sauce.
  • Please note that we will use store-bought noodles in this class.

Class 4: Easy Weekday Meal Prep (Sweet and Sour Pork)

This 2-hour hands-on cooking lesson is ideal for students who want to learn simple and easy-to-prepare meat recipes. At the end of the lesson, the students can easily prepare great meals without having to spend a lot of time in the kitchen.

Let’s narrow down the things that you can learn from this lesson:

  • Chinese Eggs and Tomato Stir Fry: This cuisine usually takes into account tomatoes and scrambled eggs cooked together with seasonings. This is a comforting and simple side dish. The class will cover the techniques and steps needed to create this quick stir-fry.
  • Sweet and Sour Pork: In this lesson, participants will learn how to prepare pork, make the batter, and fry the pork to a crispy texture.
  • Kuih Dadar: This is a traditional Southeast Asian dessert. You will learn from our chefs how to prepare crepes, how to make the filling, and how to roll them into delectable kuih dadar.

Class 5: Easy Weekday Meal Prep (Fish Sinigang)

The last lesson is all about easy weekday preparation. In this 2-hour hands-on class, you will learn about easy, healthy and delicious meals.

  • Fish Sinigang: This is a popular Filipino soup and many people love its savoury and tangy flavours. You will demonstrate how to prepare flavorful broth in this class as well as how to properly use fish to create a dinner that is both wholesome and soothing.
  • Pan-Dried Chinese Dumplings: Our professional instructors will teach you how to prepare to dump filling, and wrap it using pre-made wrappers, and pan-fry.
  • Chendol: It’s a sweet and refreshing treat usually served in Indonesia, Malaysia, and Singapore.
