How To Make Pineapple Tarts

When the Chinese New Year is just around the corner, the people would start to plan all the delicious and symbolic foods to cook.

The pineapple has long had a wonderful symbolism for the abundance of money and good luck throughout the New Year and since then it has become a popular pastry in countries like Singapore, Malaysia, Thailand, Hong Kong and Taiwan.

Pineapple Tarts are a great way to have a delicious dessert and draw a little wealth energy and luck in your direction.

You can also give a plate of pineapple tarts to friends and family as well to send the hopes of good fortune to everyone you know and love.

Making Pineapple Tarts is fun and easy. You want to get the freshest ingredients you can.

Try also to buy whatever ingredients are organic if you can.

Conventional ingredients will do just fine if that is what you have.

 

A pineapple tart has a few ingredients here is a list of what you what you will need.

  • 3 sticks of butter
  • all-purpose unbleached flour
  • eggs
  • sweetened condensed milk 1 can
  • 2 whole pineapples or three cans of pineapples
  • condensed milk
  • cane sugar
  • ½ teaspoon cloves in powdered form
  • 1 lemon
  • Vegetable oil
  • Baking sheet
  • Parchment paper

Next, simply follow the following steps to make your pineapple tarts.

1. Puree the yellow meat of the 2 pineapples in a blender.

2. Make sure you have cut away the core and the skin and dark stuff.

3. Put ½ teaspoon dry cloves and pineapple in a stainless steel frying pan and cook on medium heat.

4. Cook pineapple until dry. Then add one cup of cane sugar and one and a half tablespoons of lemon juice.

5. Lower the heat so the combination is simmering. You want to cook until this combo is an amber colour and sticky. This will be your filling.

6. When the combo is sticky take the combo off the heat and put in the fridge for about twenty –five minutes.

7. Preheat oven to 350 degrees.

Next, you are going to make the dough.

Cream the three sticks of butter and 3 and ½ ounces of sweetened condensed milk. Beat in 2 egg yolks, one at a time.

Make sure everything is mixed together well. 

Next thing you will gradually pour two cups of flour into the mixture to form a dough. The dough should not stick to your hands.

1. Break off about 90 small portions of dough, a little bigger than a quarter coin. You will be spooning a nickel size portion of pineapple filling into the centre of your dough portion which you will roll flat with a rolling pin. In a small bowl make your glaze by mixing 2 egg yolks, ¼ teaspoon condensed milk, and ¾ teaspoon vegetable oil. Roll out your quarter-size portion of dough. Place the nickel size pineapple filling into the centre of the dough then gather the dough around the filling. Then roll into a ball. 

2. Place on a baking sheet with parchment paper. With a fork press down lightly one way then make a crisscross shape by pressing lightly the other way.

3. Take a cooking brush and lightly brush on a small portion of the egg glaze to the top. Repeat for all ninety. Then place in the oven for twenty to twenty-five minutes or until golden brown. Cool and serve.

4. These pineapple tarts are a delicious addition to your baking menu. Enjoy making them and share them with all those you love. Once they are cool you can place them in a pretty box or serve on a beautiful red plate.

    Hi there, I am requesting for a quote for the instructor to come down to our hotel to do a class with our guests. The class size will be 5 pax and the date can be any date between 24 Jan – 31 Jan. For weekdays, the timing preferred will be in the evening from 6pm onwards and for weekends, morning are preferred.
