5 Days Intensive Plant Based Cuisine Class

Master the art of preparing plant-based cuisine

Our eating habits are evolving.

As the move from meat consumption to vegetable-rich diets picks up steam globally, there is no better time than now to master the art of plant-based cuisine!

Whether you are a professional chef who wants to expand and modernise their menu, or a food enthusiast who wants to make the conscious choice to move towards a plant-based diet, this hands-on cooking class will equip with you with all the right information to have mouthwatering food hit your plate! 

How long is the course?

The duration of the course is over 5 sessions of approximately 4 hours each.

For each session, you will achieve specific objectives and learn new dishes that you could confidently prepare upon completion of this class.

What will each session involve?

The class has been designed by expert chefs so that you can learn as much as possible within each session. 

Let’s take a brief look at each session.

Session 1

We will start the course with a comprehensive introduction to what exactly is a plant-based cuisine

We will then move onto discussing different plant-based diets and explore myths surrounding this form of food consumption.

Keeping in mind that the modern consumer is thoughtful and conscious of the effect of meat-dependent diets on the earth’s limited resources, we will further delve into why choosing to go vegetarian makes so much sense – not just for yourself but the planet at large.

In the last part of this session, you will learn to prepare three delicious salads;

  • Balsamic roasted beetroot & orange with caramelised walnuts;
  • Kale and cabbage slaw with crispy tofu and ginger miso vinaigrette; and
  • Roasted pumpkin with rocket, homemade dukkah and smoky aubergine dip.

Session 2

We will go further into discussing plant-based nutrition and how we could use it to substitute our daily protein needs with plants.

Many people aren’t aware that there are non-meat foods which are rich protein, such as lentil, quinoa, beans, broccoli and peas.

We will then share with you the different types of proteins and how we can pick the right foods to meet our complete protein requirements.

Lastly, you will learn three plant-based delicious recipes that will adequately meet your protein needs.

  • Quinoa & broccoli pilaf with crispy tempeh;
  • Classic dal tadka; and
  • Tamarind tofu steaks with coconut Sriracha sauce

We will close the session with an assignment on menu planning so that you can intelligently pick foods that will keep your lunches and dinners exciting, and meet your nutritional needs.

Session 3

The third session of the plant-based cooking class will focus on the Vegan diet.

A lot of people think that Vegan is the same as vegetarian, which is certainly not the case. 

You will learn the similarities and differences between the two diets.

We will move onto dairy-free substitutes that are readily and easily available from most supermarkets and also shed light on what sets apart a healthy vegan diet from a junk food one.

You will then learn another three new recipes.

  • Creamy mushroom and herb pate;
  • Vegetable no-butter masala; and 
  • Dark chocolate mousse with berry coulis.

And you also get an exciting assignment where you create your very own recipe!

Session 4

By now you are already going to be feeling confident about how far you could go with what you have already learnt. 

But there is more to come!

In the second last session of this course, we will focus on the Raw Vegan Diet. 

You will learn the following:

  • Nut milk;
  • Marinara sauce;
  • Seaweed marinara dehydrated snack;
  • Zucchini marinara;
  • Mock salmon mousse;
  • Carrot power bliss balls; and 
  • Green papaya salad

Your assignment for session four will be to transform a cooked recipe of your choice into a raw recipe.

Session 5

The final session will be about putting every together.

We will quickly go through everything that has been covered during the 5-day course.

To top it all off, we will have a little MasterChef-like contest where participants will be provided with the same ingredients to prepare their 3-course meal. 

We will also have a panel of judges to give you practical tips on how you can improve.

Importantly, you will receive certificates upon successful completion of this course.
